This summer is not just any summer. This summer we will be planning to gather together with family and friends for the fun of the Games in Rio De Janeiro, Brazil. The Games happen every four years and its always so emotional. And this time it’s going to mean more for both of us because Brazil is hosting it. When we think about summer what immediately comes to our minds is outdoors, barbecue, smoky meat, cold beer, family, friends and sunny long days. And all of that means fun. Here in Seattle we have a joke that summer starts only after the 4th of July but Farm Rich has been celebrating #99DaysOFBBQ since May 30th and continues until September 5th. Can you believe that?! Amazing! right?!

However, we are almost ending July and the summer hasn’t arrive yet here. With the Rio games two weeks way, we decided to have a pre game party to unite friends and schedule the games to be watched together, whether it’s going to be BBQ or not, all of the fun details. Of course, it rained the day of our party! But, no drama!!! We decided to make a pulled beef brisket bar using the Farm Rich Smokehouse Pulled Beef Brisket that is super easy to make and you don’t need to have a grill or worry if it’s raining or not to enjoy it! Our focus this day and the day of the games isn’t going to be the food, but the games. That doesn’t mean that we don’t care about quality. We care so much about quality that we decided to use the FarmRich Smokehouse Pulled Beef Brisket even knowing that there are so many different brands out there. We found the pulled beef brisket at Walmart in the freezer section. If you prefer a different BBQ meat, FarmRich offers beef, pork and chicken too! We love this brisket because there’s NO artificial ingredients, it’s gluten free, there’s a taste of hickory because it was smoked for almost 10 hours and the sauce is to die for! It’s BBQ made in Tennessee and they are famous for it. It’s also a great source of protein! Besides the delicious flavors, it’s so easy to make. Farm Rich Smokehouse is a frozen BBQ meat that takes only a few minutes to prepare. We used a conventional oven, but you can use a microwave, just make sure to read the instructions on the back of the package. The day of our party, and during the days of the games, we will be watching the games so we don’t want to spend hours preparing pulled beef brisket. With FarmRich Smokehouse Pulled Beef Brisket all I need to do is preheat the oven to 350ºF, pull back the film on top of the package and pop it on a baking sheet for about 40 minutes. While it’s heating up we were decorating the house!! It was so nice!!

The idea of a Pulled Beef Brisket bar came from the desire to have finger food. Everyone could bring something to add to the “bar” and it would be easy and delicious at the same time. We had on the “bar”: grilled corn, slaw, slider buns, Brazilian cheese bread, tortillas, pizza, grilled pineapple, mango salsa, tropical fruits everything that could go along with the brisket. What we made that went so well with the brisket was a North Carolina style coleslaw. The tangy vinegar sauce complimented the smoky, rich brisket perfectly. With the great combinations at the bar we made pizza with coleslaw, brisket and grilled pineapple, a slider with coleslaw and brisket on Brazilian cheese bread, and a green chile tortilla with coleslaw, brisket and mango salsa. Also, we made chalkboard signs with the name of the food, like “Team Corn”,” Team Sangria”, “Team Brisket”, decorated with Brazil and USA flags and had the time of our lives.

Ingredients

  • Shredded green cabbage
  • Shredded carrots
  • Shredded red cabbage
  • Shredded green apple
  • North Carolina style vinegar sauce
  • Combine all shredded ingredients and dress with vinegar sauce

Instructions

  1. 2 c. cider vinegar
  2. 1 1/3 c. water
  3. 1/2 c. plus 2 T.ketchup
  4. 1/4 c. packed brown sugar
  5. 5 tsp. salt
  6. 4 tsp. hot chile flakes
  7. 1 tsp. freshly ground pepper
  8. Mix together and dress coleslaw to your liking.
